Ravioli of Red Onion, Potato and Pecorino

This is a recipe I learnt to make from Jamie Oliver around 2002 when I was the head chef of his first restaurant in London. We both learnt to make the filling at the River Cafe but I believe Jamie made it into pasta. Hands down an awesome dish.
