Baigan ka bharta.... Served With litti... prepared in oven...With a desi twist .
Clean aubergine ..Make a slit. Insert peeled garlic cloves in it. Apply Mustard oil all over the aubergines. Cover it with aluminum foil for even baking.
Repeat this step with tomatoes.
Bake in oven or airfryer at high temp for 45 mins.
Peel out the skins of both... Mash it.
Add chopped onions, green chillies and coriander leaves. Add salt to taste and mustard oil. Add grated ginger.
Burn coal keep over it covered. Add few drops of oil or ghee on coal.
Serve this baigan ka bharta with hot litti.
