C/w Nana: Padek Sauce for Lao Papaya Salad (ປາແດກຕຳສົ້ມ == Padek Tum Som)

This is a specially brewed padek sauce that I use for my papaya salads. You can use this sauce for all kinds of "tum" (type of salad where ingredients are smashed together in a mortar). NOTE: The sauce is not meant to be eaten on its own and this recipe makes a HUGE batch to share with or sell to friends and family. AS for the MSG, If you add it up with all the other ingredients, that about 200 ounces. The MSG is about 8 ounces. so that is about 4% MSG. When you make Papaya salad, you use about 1 tablespoon of the sauce. 1tbsp is about 15 grams. 4% of that is a little over half a gram of MSG. Now mixing in the Papaya and tomatoes to make the papaya salad (let's say 2 cups of papaya) that brings it down to less than 1% of MSG. If you divide the batch of papaya salad into 4 servings, that is about 0.15 grams of MSG. Even if you didn't share the the papaya salad, the amount of MSG is still way way below the FDA's suggestion. In conclusion, if you ate the whole big pot of sauce alone, you will probably die, but if used as intended, you don't have to worry about the MSG. Over the years, FDA has received reports of symptoms such as headache and nausea after eating foods containing MSG. However, we were never able to confirm that the MSG caused the reported effects. These adverse event reports helped trigger FDA to ask the independent scientific group Federation of American Societies for Experimental Biology (FASEB) to examine the safety of MSG in the 1990s. FASEB’s report concluded that MSG is safe. The FASEB report identified some short-term, transient, and generally mild symptoms, such as headache, numbness, flushing, tingling, palpitations, and drowsiness that may occur in some sensitive individuals who consume 3 grams or more of MSG without food. However, a typical serving of a food with added MSG contains less than 0.5 grams of MSG.
